Sauvage 2013 – Dry

70% Cabernet sauvignon & 30% Petit verdot

The Vineyards: The Merlot grapes grow in a high quality plot adjacent to the winery in the Ellah Valley. The vineyard is located at a height of 400 meters above sea level. The clusters on the vine are thinned to limit the yield which does not not exceed 700 Kg per dunam. The Syrah vineyard is in the Shoresh region which lies in higher altitudes of around 700 meters above sea level where the increased the temperature variations between night and day improves the quality of the grapes The Winemaking

Process: After separation from the stems, the wine is fermented with the skins for 10 day. The skins are then pressed and the wine undergoes further fermentation followed by transfer into oak barrels Barrel

Aging:  French and American Oak for 13 months which contribute a range of flavors

Character: Fragrances of ripe cherry and red fruits of the Merlot accompany aromas of smoke, earth, and oak from the Syrah. Together to produce a unique blend and a wine with a bit of a wilder character

Alchohol: 13.5%

Serving Suggestions: Excellent accompaniment to meats and other cooked dishes

Aging Potential: The wine will continue to age for 8 years after harvest
